Wild and Spiny Sayote

This is the sayote, chayote or vegetable pear known to many of us.

But there is one rare sayote species that the natives in the Cordillera produce.  It looks like this!

The wild and spiny sayote!

It is cooked and prepared in almost the same way as the regular sayote. This one  however is obviously more difficult to peel. Wild as it is, the vegetable is not as tender and luscious as the regular sayote we cook with our meals.
